The third store, which opened in December 2020, is located in Hakata, which can be said to be the gateway to Kyushu and Asia.
We were also aware that it is a popular tourist spot as it is a historical merchant town and an office district where top-class companies gather.
The concept of the store is "Fusion of Europe and Asia. Motsunabe
Since its establishment in 1984, Yamanaka has maintained the traditional taste of motsunabe, with particular focus on freshness.
We carefully select the small intestines of only moderately fatty Japanese cattle that are free of any odd tastes or odors, and serve them in sizes that are satisfying to eat, which is why our motsunabe has been loved for many yeas as a high-quality motsunabe that is rich yet light and that doesn't leave your stomach feeling unwell the next morning.
We work with local vendors to carefully select the best farmers for vegetables according to the season, and combine the best ingredients by calculating the balance with motsu and how long it would take to cook them.
Our motsunabe is finished with a unique cooking method that gives it a sweet, rich and thick taste.

The "miso flavor," created through a process of trial and error that began with, Yamanaka's establishment, uses a blend of several types of miso from Kyushu, that gives it a unique and secret flavor with impact while being elegant and not persistent, leaving you feeling like you want to eat it again soon. -

We cook additional motsu before they are served.
All vegetables we use are grown in Japan. We use only domestic vegetables, working with local vendors to carefully select vegetables from the farms that are most suited for Yamanaka motsunabe, according to the season. We cut vegetables in different ways, and the crispy texture of burdock root is unique to Yamanaka.
